Our setup is designed to fit this: pre-fired oven (cores up at our base, arrives at temperature, stable for 4-hour service), pre-portioned dough, pre-cut toppings. We arrive 60 minutes before service for a fast-bump-in, run 2 to 4 hours of continuous service, and pack down in 30 minutes including freight-lift transfer. For paid building parking we'd need confirmation 48 hours ahead; otherwise our trailer is street-parked in a 2-hour zone with a building-issued event-day temporary permit.
